EMPLOYEE'S TURKEY

1 bird
1 foil pan, just big enough to fit bird.

"Rub"
Celery salt
basil
garlic powder
kosher salt
black pepper
fresh rosemary
little bit of paprika

12 oz honey

"Stuffing"
fresh rosemary
lemon, lime, garlic (any or all)

Pecan wood chips

Put bird in foil pan.  Mix rub, apply liberally to thawed bird.  Stuff it.  Place bird ever so lovingly into pan, BREAST SIDE DOWN.  Loosely cover with HEAVY DUTY foil.  Smoker at 350 for ONE HOUR, then drizzle 1/2 of honey on bird, recover, keep cooking.

WHEN INTERNAL TEMP HITS 175 (APPROX 1-2 HOURS AFTER THE DRIZZLE) FLIP THE BIRD, UNCOVER, BASTE WITH REMAINING HONEY.  COOK FOR NO MORE THAN 20 MINUTES AFTER.
